INGREDIENTS

1 pound crabmeat flaked and picked over

1/2 cup dry bread crumbs

1 egg lightly beaten

1 tablespoon mayonnaise Use a low fat type

1 teaspoon prepared Dijon-style mustard

1 teaspoon Worcestershire Sauce Lea and Perrins

1 tablespoon Old Bay Seasoning

2 tablespoons butter Unsalted

METHOD

Step One Place the bread crumbs and the crab meat into a large bowl and combine well.

Step Two Add in the egg, mayonnaise, mustard, Worcestershire Sauce and the Old Bay Seasoning and combine the ingredients well

Step Three Add in the crab meat and bread crumb mix and gently fold in.

Step Four Divide the mixture into eight portions and make 8 crab cake patties.

Step Five Heat the butter in a heavy skillet or frypan over a medium heat.

4 slices whole wheat bread crusts removed and made into bread crumbs

1/4 cup fresh parsley minced

METHOD

Step One Place all the ingredients in a large bowl and combine well

Step Three Preheat the oven to 350 degrees

Step Four Place the crab cake patties onto a lightly greased baking sheet. Bake for around 15 minutes.

Step Five Turn the crab cakes over and bake for a further 10 minutes until golden brown
