1 pound crab meat flaked and picked

2 tablespoons fresh parsley finely chopped

1 teaspoon dry mustard

1 teaspoon Worcestershire Sauce

1 teaspoon Tabasco Sauce

2 eggs Lightly beaten

2 tablespoons mayonnaise Low fat type

1/2 cup Saltine or Soda cracker crumbs

Salt and black pepper To taste

Plain flour


Step One Place the parsley, dry mustard, Worcestershire sauce, hot sauce, eggs,and mayonnaise in a large bowl and mix well together.

Step Two Add the crab meat and crumbs and fold together gently. Season with salt and fresh ground black pepper.

Step Three Divide the mixture into 8 portions, form crab cakes and then coat in flour.

Step Four Gently fry in oil until a golden brown on each side.



1 1/2 pounds lump crab meat flaked and picked

2 teaspoons Dijon mustard

2 tablespoons celery finely chopped

1/2 cup cream

1/4 pound fresh scallops

1 teaspoon fresh Italian parsley finely chopped

1 tablespoon scallion thinly sliced

1 teaspoon fresh thyme finely chopped

1 tablespoon lemon zest finely grated

Fresh ground black pepper

Panko breadcrumbs


Step One Place the scallops in a food processor with a pinch of salt and black pepper.

Step Two Slowly add the cream and blend until smooth then set aside

Step Three Place the mustard, celery, herbs and lemon zest in a bowl and then add in and gently fold in the crab meat and evenly mix.

Step Four Gently fold in the scallop cream mix and gently mix with the crab meat and other ingredients.

Step Five Form crab mixture into cake crake patties and chill in the refrigerator

Step Six Heat oil in a heavy frypan.

Step Seven Dip each side of the crab cake pattie in the panko crumbs

Step Eight sauté the crab cakes in the frypan until each side is golden brown
