Cream of Crab Soup Recipe



THE BEST CREAM OF CRAB SOUP RECIPE

Anywhere near the Chesapeake Bay, you will find Cream of Crab Soup on the menu, from restaurants to crab shacks. The soup is always tasty and always seasoned with Old Bay Seasoning. These soups always feature the local blue crab, which has sweet and succulent flesh. Just about everyone has a variation on these recipes.

INGREDIENTS

1 pound jumbo lump crab meat

1/4 cup butter

2 pints heavy whipping cream

1 quart half and half

Cornstarch

1 pint milk

1/2 teaspoon salt

3 teaspoons Old Bay Seasoning

1 tablespoon fresh parsley

Black pepper

METHOD

Step One Place the milk, half and half, and the heavy whipping cream in a saucepan and bring to the boil.

Step Two Add in the crab meat, fresh parsley, Old Bay Seasoning, butter, salt and pepper.

Step Three Make a paste from some cornstarch and water.

Step Four When the soup starts to boil add in the cornstarch gradually until the soup thickens

Step Five Season to taste, garnish and serve

MORE GREAT CREAM OF CRAB SOUP RECIPE

INGREDIENTS

1 pound lump crabmeat

1 medium onion minced

3 tablespoons butter

1 teaspoon butter

2 tablespoons all purpose flour

2 cups clam juice

2 cups half and half

1/4 cup dry white wine

Black pepper season to taste

Old Bay Seasoning

1 tablespoon fresh parsley minced

METHOD

Step One Gently melt the 3 tablespoons of butter in a large saucepan

Step Two Add in the minced onion and sauté until it is soft and tender, stir the mixture frequently

Step Three Add in the flour and stir for about minutes until its well mixed.

Step Four Add in the clam juice and whisk through.

Step Five Increase heat and bring the mixture to the boil, stirring occasionally

Step Six Add in the half & half and return to boil, stir frequently.

Step Seven Reduce the heat and then simmer for about 10 minutes.

Step Eight Set aside 25% of the largest crab lumps

Step Nine Add the remaining crab meat, wine, pepper a pinch of Old Bay to the soup

Step Ten Add in the salt to the soup and then simmer for 3 minutes. Serve in soup bowls and divide the remaining crab lumps evenly between bowls. Lightly dust the top of each bowl with Old Bay seasoning. Enjoy!

ANOTHER GREAT CREAM OF CRAB SOUP RECIPE

INGREDIENTS

1lb lump crab meatpicked over for shell and cartilage

1 cup milk

4 tablespoons butter

½ cup white onion finely minced

½ cup all purpose flour

1 ½ cup chicken stock

1 cup heavy cream

½ teaspoon Old Bay seasoning

½ teaspoon sea salt

¼ teaspoon black pepper

METHOD

Step One Melt the butter in a pan

Step Two Add in the onions and gently sauté until they are soft.

Step Three Add in the flour and stir until combined.

Step Four Add in the chicken stock, and stir frequently until the soup mixture thickens.

Step Five Add in the cream and the milk and keep stirring until the soup thickens.

Step Six Add in the Old Bay seasoning, salt and the pepper

Step Seven Finally add in the crab meat and warm that through

Step Eight Garnish and serve
