Crab Soup Recipes



1 cup crab meat picked over for shell and cartilage

2 tablespoons butter

1 onion finely chopped

1 tablespoon all purpose flour

2 cups fish stock or you can use warm water but stock adds to the taste

1/4 cup fresh celery finely chopped

Fresh parsley finely chopped

Tabasco sauce sprinkled in to taste

3 cups milk scalded

Salt and ground black pepper season to taste


Step One Gently melt the butter and then add in the onion. Lightly sauté until brown

Step Two Slowly blend in the flour, then gradually add in the stock or warm water

Step Three Gently cook until the mixture is slightly thickened

Step Four Add in the crab meat, chopped celery, parsley and other seasonings.

Step Five Simmer gently for around 30 minutes, stirring frequently

Step Six Before serving up add in the scalded milk and mix well, it serves 4.
