Crab Meat Salad



12 ounces lump crabmeat fresh is best, or canned works, drain and pick over for shell

1 cup cooked lobster meat cubed and this is optional

8 ounces frozen fully cooked salad shrimp use those very small shrimp, thaw out

20 ounces mixed salad greens buy a couple of premix packs

1 large grapefruit peel and section the fruit

1 fresh pineapple peeled, cored and then sliced into 3/4 inch wedges

2 ripe red tomatoes cut into wedges, although I use cherry tomatoes cut into halves


Step One For the salad dressing, put the orange juice concentrate, vinegar and water into a blender and then blend on low speed.

Step Two Then slowly drizzle the olive oil into the blender until mixture starts to thicken slightly

Step Three Season with salt and pepper to taste and then refrigerate until you are ready to serve

Step Four To make the crab and seafood salad, place the lobster, shrimp and the crabmeat in a large bowl

Step Five Add 2 tablespoons of the citrus vinaigrette and toss it until all the seafood is well coated.

Step Six Divide the salad greens onto 6 dinner plates or place in your salad bowl.

Step Seven Place the seafood mixture onto the salad greens.

Step Eight Place the grapefruit sections, kiwi slices, pineapple and tomato wedges onto the plates, be as creative as you like.

Step Nine Serve the salad with the remaining chilled citrus vinaigrette on the side.
