INGREDIENTS Serves 4 people

2 1/2 tablespoons vegetable oil

1 small onion finely chopped

1 small stalk celery finely chopped

1 clove garlic minced

3 (6 oz.) cans lump crabmeat picked over

3 tablespoons mayonnaise

1 tablespoon tomato paste

1 tablespoon jalapeño chili minced

1 tablespoon lemon juice fresh squeezed

3/4 cup plain dried bread crumbs

3 tablespoons all-purpose flour

1/2 teaspoon dried thyme

1/2 teaspoon paprika

1/4 teaspoon cayenne

2 large eggs

Salt and pepper


Step One Heat half a tablespoon of oil in a frypan or skillet over a medium heat.

Step Two Add in the onion, celery and garlic and gently fry for around 3 to 4 minutes. Put aside and allow to cool.

Step Three Combine remaining ingredients in a large bowl, except the oil. Add in the onion mixture and combine well

Step Four When done cover and chill in the refrigerator for 30 minutes.

Step Five Heat the remaining 2 tablespoons oil in a heavy frypan or skillet over medium to low heat.

Step Six Place the crab cake patties into the pan and gently sauté until golden brown, and this takes about 4 minutes.

Step Seven Turn the cakes over and sauté for a further 3 minutes until golden brown.



1 1/2 pound fresh white crabmeat flaked and picked over

1 teaspoon garlic minced

2 cups Cajun Trinity Trinity is a combination of fine chopped celery, onion, and bell pepper.

1-2 Tablespoons butter I prefer unsalted

1 Tablespoon oil olive I prefer light olive oil

1 Tablespoon Italian seasoning or just Oregano is okay here

1 Teaspoon Creole Seasoning I prefer Tony’s Seasoning

2 cups Bread crumbs

3/4 cup Mayonnaise

1 teaspoon Creole mustard

1 egg

1/2 cup milk

Canola Oil


Step One Saute the Cajun trinity in butter and olive oil in a heavy fry pan or skillet

Step Two Add in the minced garlic, Italian seasoning and Cajun seasoning .

Step Three Transfer the mixture to a large bowl and then add in 1 cup bread crumbs. Combine well.

Step Four Now add in the mayonnaise and the Creole mustard. Mix this well.

Step Five Now gently fold in the crabmeat, and blend carefully and well. Adjust the dryness of the mixture with mayonnaise if too dry.

Step Six Split the mixture up into 4-6 portions, make a ball and then flatten to form a pattie.

Step Seven Place them on a place and place in the refrigerator for 1 hour.

Step Eight Lightly whisk the egg in a small bowl and add in the 1/2 cup milk.

Step Nine Place the 1 cup of bread crumbs into a large bowl.

Step Ten Cover the bottom of a fry pan with Canola oil and preheat on a medium heat. Don’t make too hot!

Step Eleven Remove the patties from the frig and then dip each crab cake in the egg wash mix and then coat in bread crumbs.

Step Twelve Carefully put the crab cakes in the skillet and sauté for around 2 to 3 minutes. Turn them over and then sauté for a further 2 to 3 minutes until golden brown. Drain on paper towels and then serve these delicious Cajun Cake Crab



1 pound crab meat flaked and picked over

1 medium celery stalk sliced

1 small red pepper seeded and chopped

1/2 medium onion sliced into quarters

1 clove garlic quartered

1/2 cup bread crumbs

2 large egg whites lightly beaten

1 teaspoon Dijon mustard

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper


Step One Place the celery, bell pepper, onion and garlic into a food processor and process until they are finely chopped, don’t puree then!

Step Two Transfer the mixture into a large bowl.

Step Three Add in the bread crumbs and mix well. Make balls from the mixture to form patties and place patties on a baking tray

Step Four Preheat the oven to 350F.

Step Five Spray the baking tray with an oil cooking spray.

Step Six Place the crab cakes on the tray and bake for around 20 minutes, then turn the cakes over and bake a further 15 minutes until these Cajun Cake Crab are golden brown and crispy.
