INGREDIENTS

1 pound lump crabmeat

1 teaspoon dry Mustard

1 egg lightly beaten

1 tablespoon parsley finely chopped

3 tablespoons mayonnaise

1 tablespoon butter melted

1 tablespoon Worcestershire Sauce

1 cup Saltine crackers crushed

1 tablespoon lemon juice fresh squeezed

1 teaspoon Old Bay Seasoning

METHOD

Step One Combine all ingredients in a large bowl except the crabmeat and the Saltine crackers. Mix and combine all ingredients well.

Step Two Add in the Saltine crackers and blend well with other ingredients

Step Three Add in the crabmeat and gently fold into the mixture so a snot break up the crab flakes

Step Four Make the crab mixture into balls and form crab cake patties.

Step Five Gently fry the crab cakes in vegetable oil on medium heat, and turn once until they are golden brown.

INGREDIENTS CRAB CAKES

32 ounces claw crabmeat

2 cups plain bread crumbs

2 tablespoons Dijon mustard

1 tablespoon hot sauce

1 tablespoon Cajun seasoning

3 eggs

1 red onion minced

Vegetable oil

INGREDIENTS CAJUN SEASONING

1 teaspoon salt

1 teaspoon paprika

1 teaspoon dry mustard

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1/4 teaspoon cayenne

Method Simply mix all of the ingredients together.

METHOD FOR CRAB CAKES

Step One Flake the crabmeat into a large bowl. Add in the bread crumbs, mustard, hot sauce, Cajun seasoning, eggs and onion. Mix well but don't overdo it

Step Two Preheat the oven to 250 degrees F.

Step Three Make 16 balls from the mixture and then flatten them to form the crab cake patties.

Step Four Pour 1/2-inch of vegetable oil into a frypan or skillet and heat over medium-high heat.

Step Five When the oil is hot, sauté the crab cakes until golden brown, and for 3 minutes on each side.

INGREDIENTS Serves 6

1 lb crabmeatdrained, flaked and picked over

1/4 minced minced

3 tablespoons scallions thinly sliced

2 egg whites

1 tablespoons lemon juice freshly squeezed

1/4 teaspoon prepared mustard

1/4 teaspoon hot-pepper sauce

1/4 teaspoon Worcestershire sauce

1/2 cup oyster crackers crushed

1/4 cup mayonnaise use a low fat variety

INGREDIENTS - Jalapeno Tartar Sauce

1 jalapeno pepper minced

1/2 cup plain yogurt Use low fat type

2 tablespoons onions minced

1/8 teaspoon ground red pepper

METHOD

Step One Place the crab meat, onions and scallions into a large bowl and combine well, fold the crab meat gently

Step Two Place the egg whites, lemon juice, mustard, hot pepper sauce and Worcestershire sauce in a bowl and mix well.

Step Three Add in the crab mixture and fold in gently

Step Four Add in the crackers and fold in gently, then add the mayonnaise and gently combine all the ingredients.

Step Five Line a baking tray with aluminum foil.

Step Six Form the mixture to make 12 crab cake patties

Step Seven Place the patties in the refrigerator for 30 minutes

Step Eight Place the patties under a preheated broiler for around 8 minutes, and turn the patties once. Broil until golden brown.

METHOD - TARTARE SAUCE Serves 6

Step One Place the peppers, onions, yogurt and red pepper into a food processor and blend until smooth.

Step Two Place in refrigerator until crab cakes are ready.
