This recipe is from Maryland and I have to say it’s not half bad, so I have worked on this, and tried it a few times.

This recipe for baked crab cakes requires lots of very lumpy crab meat and very little filler.

The secret is careful handling so as not to let them break up.

The second variation departs slightly from the original recipe and seems to work better.


Jumbo Lump Crab Meat 12 ounces of the best quality lump crab meat

White Sandwich Bread 6 slices of firm white bread, cut off the crusts

Mayonnaise 2 teaspoons mayonnaise (Hellmans) or make your own for the best results, a low oil mayonnaise works best.

Old Bay Seasoning 1 ½ teaspoons

Baking Powder ¾ teaspoon

Fresh Egg 1 small to medium sized egg, beaten.

Worcestershire Sauce ¾ teaspoon

Mustard Powder 1/8 teaspoon

Dried Parsley ¾ teaspoon

Butter 1 ¼ tablespoon melted

Ground Black Pepper Fresh ground pepper to taste

Sea Salt Add a pinch to taste


STEP ONE Grind the bread into fine crumbs using your food processor.

STEP TWO Place 3 tablespoons of bread crumbs, Old Bay seasoning, black pepper, salt, dried parsely, baking powder, mustard powder into a large mixing bowl. Gently fold together all the ingredients together until well combined

STEP THREE Mix the mayonnaise, melted butter, Worcestershire sauce and egg together.

STEP FOUR Add in the jumbo crab meat and gently fold together. Be very careful when mixing in the crab meat so that it doesn’t break up too much as you need those lovely chunks to stay together.

STEP FIVE Add in the bread crumb mixture and gently blend together, taking care not to break up the crab meat lumps.

STEP SIX Gently scoop out the chilled crab mixture to make 10 portions (an ice cream scoop works well). Place on a plate and gently form each into a ¾ inch thick patty.

STEP SEVEN Cover the crab cakes and place in the refrigerator for 1 hour, or as long as you want. This helps to consolidate the crab cakes and stop them crumbling during cooking. Preheat your oven to 375 degrees F (190 degrees C)

STEP EIGHT Carefully transfer the crab cakes onto a lightly buttered baking sheet. Bake for 15 minutes, then turn crab cakes over and bake for an additional 15 minutes until they are brown.
