Imitation crab meat is actually called Surimi. This is made from Pollock, Hake or some other white fleshed fish, and has a texture similar to flaked crabmeat and is artificially coloured and flavored. It’s well known in Asia and in Western countries are also called as sea legs or krab in America, seafood sticks, crab sticks, fish sticks or seafood extender.

Alaska Surimi Seafood is made from skinless, boneless Alaska Pollock fillets. The fish fillets are finely chopped and the surimi flakes are then blended with other ingredients such as starch, salt, natural crab meat and egg white.

This process yields a paste that is then formed, cooked and cut into the various cuts and styles you find available in your local grocery store's refrigerated case.

When purchasing Alaska Surimi Seafood, make sure the label says that it is made with Alaska Pollock. This ensures you are buying the highest-quality imitation crab product available.

INGREDIENTS

1.5 lb package Surimi

1/2 cup sour cream

1/3 cup mayonaise

1/2 tsp freshed minced garlic

1/4 cup finely chopped green onions

1/2 cup diced celery stalks

Juice from 1 small lemon (1-2 tbps)

1 tsp sugar

1/4 tsp salt

METHOD

Step One Hand knead Surimi in mixing bowl until large pieces are broken down into shreds. Set aside.

Step Two Mix all remaining ingredients in separate mixing bowl until well blended. Add to Surimi and mix well.

Step Three Cover and refrigerate at least 1 hour to infuse flavors. (Can be made the day before and left overnight). Serve chilled.

INGREDIENTS

12 oz. Alaskan Surimi you can sue others but Alaskan has the best taste

12 slices fresh mangoor use papaya, cantelope or honeydew melon with the skin removed. Its typically two whole fruits and mango is the most delicious followed by ripe cantelope

1/4 cup fresh cilantro chopped

1/4 cup seasoned rice vinegar

2 teaspoons Asian fish sauce

1 teaspoon white sugar

3 small bell peppers use three different colors, red, green, yellow and the seed and dice finely

1/2 jalapeno pepper seeded and then minced

1/2 seedless cucumber finely diced

METHOD

Step One Blend the vinegar, fish sauce and the white sugar in a large bowl.

Step Two Add in the bell peppers, jalapeno pepper, cucumber, cilantro and the Alaskan Surimi

Step Three Gently stir the mix so as to evenly combine the dressing.

Step Four Chill before serving for 2 hours. When serving, plate up 3 slices of your chosen fruit and then top it with about 1 1/2 cups of your salad.

INGREDIENTS

8 oz. imitation crab meat thawed and chopped

1/2 cup celery thinly sliced

1/2 cup mayonnaise I prefer Hellmans

2 tablespoons white onion minced or finely chopped

1/2 teaspoon lemon juice or lime juice works well

1/8 teaspoon salt

1/8 teaspoon black pepper freshly ground

METHOD

Step One Combine the crab meat and the celery

Step Two Then add in the mayonnaise, onions, salt, black pepper and the lemon juice and mix well.

Step Three Place in the frig and chill for at least 2 hours before serving
