Crab Dip Recipe

THE BEST CRAB DIP RECIPE

This crab dip recipe can be varied to also contain lobster meat or even some shrimp as well. Also I like to add in some crab meat sticks that add some color and bulk as tinned and fresh crab can get expensive

RECIPE INGREDIENTS

1 cup of crab meat drained and dried

1 tub of cream cheese cut the cheese up into small sections

1 tablespoon white onion finely chopped although I also like a spring onion for this

2 tablespoons milk and I prefer using whole milk, not low fat

1 tablespoon lemon or lime juice either fresh or bottled

1/2 teaspoon salt I prefer sea salt

1/2 teaspoon paprika

¼ teaspoon curry powder and I use mild korma as madras tends to be too strong

black pepper fresh ground to taste

METHOD

Step One Place the milk, lemon or lime juice, chopped onion, salt, paprika and the curry powder into a blender.

Step Two Add in a few sections of cream cheese and then process on a low speed setting until its smooth.

Step Three Put the blender into high speed and gradually add in all the remaining cheese and blend.

Step Four If required use a plastic or rubber spatula to keep the ingredients from binding up.

Step Five When you have smooth a smooth mixture, add in the crab meat and continue until fully blended.

Step Six Place in a bowl and keep chilled

Step Seven I also like a quick drizzle of lime juice on the top and garnish with cilantro

Step Eight Serve with vegetable dippers (carrots, celery etc) or chips, or saltine style crackers
