THE BEST CRAB CLAWS

Everyone loves claws, and there are a variety of ways of enjoying them.

Of course you can enjoy them fresh with other main part of the crab.

They can be eaten as appetizers or deep fried or any other style you like.

THE BEST FRIED CLAWS

INGREDIENTS

2 1/2 lbs stone crab claws

3 fresh eggslightly beaten

1/2 cup fresh milk low fat if you prefer

2 tablespoons salt

Black pepper fresh ground to taste

3/4 cup all-purpose flour sifted

3/4 cup dried bread crumbs home made or packet mix

3/4 cup dessicated coconut Optional method

Oil for deep frying

METHOD

Step 1 Crack and remove the outer shell of the claw and make sure the eat remains attached to one side of claw

Step 1 Combine the beaten eggs, milk and the seasonings.

Step 1 Combine the flour and bread crumbs (or coconut if using this)

Step 1 Dip the claws into the egg mixture and then roll in flour and crumb mixture so that the claw is well covered

Step 1 Fry in the heated vegetable oil at 350 degrees for around 3 to 5 minutes, this will depend on the size of the crab claw, they will turn a lovely golden brown.

INGREDIENTS

16 uncooked claws crack the shell

1 teaspoon vegetable oil

1 tablespoon fresh ginger sliced thinly

2 garlic cloves chopped finely

3 red chillies you can choose they type and heat level you like and they are to be de-seeded and fine chopped

125ml/5fl oz tomato ketchup

5 tablespoons Thai sweet chilli sauce

4 tablespoons Chinese Hoisin sauce

3 tablespoons Thai fish sauce

75ml/3fl oz water

1 tablespoon caster sugar

METHOD

Step 1 Place the tomato ketchup, vegetable oil, sweet chilli sauce, hoisin sauce and fish sauces in a bowl and whisk together well, a food processor also works well here

Step 2 Add in the water and sugar and then also mix well.

Step 3 Heat the vegetable oil in a wok or fry pan until hot and add in the claws. Cook for around 60 seconds, stirring and turning frequently, then add in the ginger, garlic and the chillies and gently stir fry for around 2 - 3 minutes.

Step 4 Now pour the sauce mixture over the claws in the pan and stir well to coat properly.

Step 5 Reduce the heat to a simmer, then cover with a lid and gently cook for around 8 - 10 minutes until the crab is cooked through and the sauce is reduced to a nice thick and sticky form.

Step 6 Place the claws onto a serving platter and enjoy.
